What makes a wood-fired pizza oven better than an electrical vat or gas-burning unit? Well, there’s a certain psychological satisfaction involved in wood cooking. It evokes both the puerile pleasure of camping and the primal passion of our cave-dwelling ancestors. Of course all this excitement dries out when it’s time to clean the oven. Or when your logs caught a drizzle and refuse to light. Or when you’re coughing and sputtering, your eyes red and teary from smoke. But if you can live with all that, your pizza oven will be your greatest treasure.

Besides, all the drama evaporates from memory once you sink your teeth into that first bite. Oven-cooked food has a rich, smoky flavour that you can only get from outdoor cooking with raw, unprocessed wood. Of course your oven can function on wood pellets and charcoal briquettes as well, so your choice of fuel has some wiggle room. Also, you can buy fruitwood to give your food that added touch of flavour. Pick the right wood for your dish. As a general guide, white meat needs light, sweet wood, like apple, pear, or peach.

Red meat works better with darker fruitwoods – hickory, oak, maple, or pecan. Mesquite has a bitter taste that’s somewhat harsh, so it pairs well with intense chilli dishes. And if you haven’t explored the versatility of your pizza oven, you should. It can do so much more than pizza. Here are some Greek dishes you can try out – though what makes a dish ‘Greek’ is debatable. Is it where the dish is thought to hail from … or is it more about the ingredients?

 

Greek potatoes

According to foodies, these crispy oven-roasts go well with souvlaki and Greek salad. Souvlakia (that’s more than one souvlaki) are a type of Greek kebab. They’re made by skewering meat (mostly pork) and vegetables, and you can make them in the oven as well. Roast your souvlakia at the same time as your potatoes so they can infuse each other with flavour. To make the souvlaki, marinate your meat overnight in a mix of red wine vinegar, olive oil, parsley, oregano, garlic, onion, mint, and black pepper. If you’re short on time, leave the meat cubes in the marinade for at least two hours before skewering and roasting.

To go with your souvlakia, make (or buy) tzatziki sauce for dip. It’s easy. Just take some Greek yoghurt – it has a thick, solid texture, is firmer than regular yoghurt and its consistency is closer to soft-serve ice cream than conventional yoghurt. Whisk your yoghurt with lemon zest, minced garlic, grated cucumber, chopped dill, chopped mint, and – if you like – a little olive oil. Chill the sauce as a nice contrast to your steaming souvlakia.

Now for the potatoes. Peel them and dice them, or cut them into wedges. Drizzle them with olive oil, lemon juice, or both, depending on your flavour preference. The amount of oil you use will influence how crispy your oven result will be. You can use an air fryer, but it won’t have the smoky flavour that comes from roasting them in your pizza oven. Either way, add oregano, salt, and black pepper. Put your potatoes in an oven-proof dish and put it into the oven. You can pour chicken stock over your potatoes, but you don’t have to.

 

Add some vegetables

Souvlakia only need to roast for four or five minutes, and you can turn them halfway through. The potatoes will need about an hour to be fully cooked. Check them with a toothpick to be sure. The tzatziki doesn’t go in the oven at all. To give your Greek meal a healthy touch, you could serve Greek salad. Ingredients include red inions, romaine lettuce, (different) coloured bell peppers, tomatoes, cucumbers, olives, feta cheese, oregano, olive oil, and black pepper. Crumble the cheese for best results.

Now then, seeing as your outdoor oven has pizza in its name, you should probably use it for pizza on occasion. So here’s a quick Greek pizza recipe. Depending on how ambitious you are, you can make the dough from scratch or use store-bought pizza base. Generously pour marinara sauce or crushed tomatoes on the pizza dough. The sauce shouldn’t be too moist or it’ll make your pizza soggy, so if you’re using canned tomatoes, drain them first.

The rest of your toppings are Kalamata olives, feta, mozzarella, oregano, artichoke, red bell peppers, basil, and flaked red pepper. You can pre-roast the bell pepper and marinate the artichoke beforehand. If you want to go all out, you can make some Greek desserts as well. They have deliciously exotic names like protanopia (orange and cinnamon cake baked with yoghurt), galaktoboureko (custard pie), and millimicron (honey syrup walnut cookies). Kalí óreksi!

Thanks to my favourite pizza delivery store I can have pizza at almost any hour and since I love that Italian pie, I could have it every day, every week throughout the year. I love to celebrate the first rays of sunshine in spring with a light asparagus pizza topped with goat cheese, have a peri-peri chicken pie to go with an ice-cold beer at the festival in summer or indulge in a hearty calzone in autumn filled with fresh mushrooms, spinach and garlic. Thus, for me, pizza is always on my mind and in season.

With the cold days and early dusk upon us, there are probably a lot of evenings ahead when we just want to snuggle up with our favourite series on and enjoy a slice of piping hot pizza to warm our bellies and our heart. And as roots and nuts are the winter vegetables of any kitchen, I have put together a list of delicious pizzas with a winter flavour profile and vegetables topping combinations for you to enjoy when you are in need of hearty, rustic, comfort food.

 

Turkey sausage and Brussels sprouts

Fulfil your savoury desire with delicious sausage meat and get the nutrients from the sprouts. Brussels sprouts have been linked to many health benefits, as they are high in nutrients and antioxidants, which might help to prevent cancer. This winter pizza is great paired with a glass of crisp white to go with the rich provolone cheese and the hearty pesto.

 

Sweet potato and kale

If you feel guilty about craving pizza every day and are looking for a vegetarian and healthy topping to feel good about it, this one is for you. Pulsed sweet potatoes make the sauce for this delicious pizza that is then topped with pieces of kale, goat’s cheese, red pepper flakes, Parmesan and walnuts.

 

Pumpkin patch

This pizza is a great choice for anybody who wants to celebrate autumn flavours on a pizza. The crust has a pumpkin base that is topped with baby spinach, roast capsicum, cherry tomatoes, creamy feta and mozzarella. Topped with Greek yoghurt and finished off with lemon to de-spice the jalapenos, this hearty pie will cater all meat lovers. The star of this pizza is the spicy lamb combined with baby spinach and fetta cheese, which completes this, pies broad flavour palette, adding a Middle Eastern twist to it.

 

Goat cheese, apple and pecan

Another pie that is not heavy is this one. We all remember the saying: an apple day… don’t we? The healthy fruit goes incredibly well with the tangy goat cheese and the pecans add a nice crunch to each slice. This sweet and savoury pizza is a great variation from the common heavy slices.

 

Buffalo cauliflower with blue cheese

Even though this topping combination sounds a little weird at first, it really works and is absolutely delicious. Roasted cauliflower florets tossed in spicy buffalo sauce to deepen its flavour, and then topped with tangy but creamy blue cheese is a flavourful combination for a winter pizza.

 

Sheep Camembert, garlic and sundried tomatoes

Classic Camemberts are usually made of cow’s milk, but this cheese is different with its rich and grassy note, making this pizza perfect for a wine and cheese affair. The cheeses flavours are complemented by the sweetness of the garlic and the tangy tomatoes. Finished off with some chopped rosemary this pie might become your winter favourite.

 

Red potato, sausage and Fontina

Even though you might think putting potatoes on pizza is a little odd, it is actually quite a popular topping in Italy. The hearty spud paired with some mild Italian sausage meat gives this crust a rustic touch. The gooey Fontina cheese will cover all the other delicious ingredients such as red pepper flakes, sweet roasted garlic and sprigs of fresh rosemary.

There are many ways to come together and have a good time but one of the best ways to enjoy quality time with your loved ones is to share a delicious pizza or two amongst one another. Especially if the toppings celebrates a certain country, and even if it doesn’t everyone loves a slice or two anyway.

Spicy Lamb

Chicken breast, roast capsicum, spring onion, feta cheese, peri-peri mayo and lemon. A firm favourite amongst those who enjoy the spicier things in life, this pizza definitely belongs on the table alongside the Soccer World Cup.

 

Tandoori Chicken

Tandoori marinated chicken breast, Spanish onions, capsicum, cherry tomato topped with Greek yoghurt. For the curry lovers who perhaps haven’t ventured out of the curry pot. This pizza will take your taste buds on a culinary adventure without even trying too hard.

 

Pumpkin Patch

Pumpkin base, baby spinach, roast capsicum, cherry tomatoes, Spanish onion, feta cheese, cashews, topped with mozzarella. If you are gluten intolerant or vegetarian this pizza is for you. Don’t let your carnivorous friends have all the fun when there are delicious pizzas like this out there.

 

Superveg

Grilled eggplant and zucchini, baby spinach, Kalamata olives, roast capsicum, Spanish onion, feta cheese topped with pesto mayonnaise. Another one for the vegetarians. It wouldn’t be right to only tell you about one option when there are delicious other options.

 

Garlic Prawn

Marinated tiger prawns, roast capsicum, spring onions, cherry tomato, feta cheese, garlic, herbs and lemon. We all know or are a seafood lover, and that’s where the Garlic Prawn pizza comes in. The tiger prawns make this pizza a standout dish without overdoing it.

 

Clean Eater

Tomato base, vegan cheese, onions, capsicum, spring onion, house mushroom mix, garlic and chilli sauce. We can’t forget our vegan friends, we either are one or know one or two. This pizza is for them, nothing has been hurt when making this pizza.

 

Supreme

Ham, mushroom, onion, capsicum, hot salami, Kalamata olives and pineapple. Sometimes a simple pizza is the best way to go and is usually a winner amongst everyone.

 

Italian

Hot salami, mushroom, garlic, Kalamata olives, chilli flakes and anchovies are optional. Everybody loves a bit of Italian and this where the Italian pizza shines.  Well, because they invented it!

No matter who you are supporting or what type of pizza toppings you like there is something that will put a smile on your face. The Soccer World Cup 2018 has thus far been quite a rollercoaster and it’s going to be great to see who will win this year, after all the surprises.

Food enthusiasts know that Greece is home to some of the finest food in the world. You have probably heard of a lot of iconic Greek dishes, such as Gyros, Moussaka, that oven-baked casserole of layered eggplant and spiced meat topped with a creamy béchamel sauce, dolmades, the stuffed grape leaves and of course the creamy yoghurt based cucumber sauce Tzatziki.

But what about Kleftiko? The magnificent slow cooked lamb dish was created by the Klepht and traditionally cooked for hours in a pit in the ground and is a signature dish in Greece. In the 19th century, the Greeks fought against the Ottomans in the Greek War of Independence. During this period a group of “klephts”, also spelt “kleftes”, descendants of the Greeks, fled into the mountains to avoid the Turks but would steal from them in order to survive. The name Kleftiko literally translates as “the thief’s meal” as “klephti” is the Greek word for “thief”. Cooking their meal in the ground was a convenient method to not have the smell and smoke detected, and of course their haul, until the end of the day when the cooks would return and dig up their meal from the earth.

Even though traditionally the lamb was stolen, these days it is much easier to replicate the delicious meal with a nice grass-fed piece of lamb and your wood-fired pizza oven. For the dish, you can either use a leg of lamb or a lamb shoulder, which is a great cut as it stays moist and tender and also cheaper than a leg of lamb. Just make sure your butcher cuts up the meat in chunky fist-sized pieces and that each piece has bone, meat and some fat on it. The dish is usually served with a Greek salad and a generous dollop of sheep’s yoghurt. Devoured with an ice-cold beer or even Ouzo on hot summer evenings you will be with no doubt transported to food heaven. Here is what you need for your family feast feeding four people.

Greek Lamb Kleftiko

Ingredients

  • 1 kg of lamb,
  • 1kg small potatoes halved,
  • 100g crumbled feta cheese

For the marinade

  • 1 tbsp. dried oregano,
  • 2 sprigs of fresh rosemary or thyme,
  • 3 bay leaves,
  • 2 juicy lemons,
  • 4 onions quartered,
  • 1 small bulb of garlic,
  • salt and freshly cracked pepper,
  • olive oil

Method

Skin and chop the garlic, add the dried oregano and fresh herbs, a dash of olive oil and salt and pepper to taste. Rub the paste all over the lamb pieces and let sit in the fridge overnight.

Fire your wood fired pizza oven to a temperature of about 450 degrees, let the flame die down and push all embers to the side of your oven using an oven trowel. Put half of your potatoes and onions on an oven proof tray and place your meat on top. Nestle the remaining vegetables around it, add the bay leaves, squeeze over the lemon juice and drizzle everything with olive oil. Cover with tin foil to keep the meat and vegetables moist and let cook for about 3.5 hours to let the fat render into a lovely gravy that gets soaked up by the potatoes.

Check the temperature every now and then but make sure not to open the door too often as to not let the heat escape. The cooking time of the dish depends on the thickness of the meat, the tray and the intensity of the heat. If you want your meat to be browned, take off the foil after about 3 hours and also add the crumbled feta to the vegetables around it. The dish should be ready when the meat is falling off the bone.

Middle Eastern Lamb Pizzas

Serves: four

Time: 40 minutes

Ingredients:

  • 300g plain flour
  • 2 teaspoons salt
  • 1/3 cup Greek style yoghurt, plus more to garnish
  • 100ml olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 600g minced lamb
  • 2 teaspoons ground cumin
  • ½ teaspoon ground cinnamon
  • 1/3 cup tomato paste
  • 400g can of chickpeas, drained
  • Coriander leaves to garnish

 

Methods:

  1. Heat your pizza oven as prescribed
  2. Make the pizza dough by mixing flour and ½ teaspoon salt into a bowl. Then make a well in the centre and pour ½ cup of hot water, the yoghurt and two tablespoons of oil. Mix until dough comes together
  3. Lightly flour a flat surface and turn the dough out, kneading the dough until smooth. Roll dough into ball and wrap in cling film before setting aside
  4. Grab a frying pan and heat ¼ cup of oil over medium heat. Add chopped onion, garlic and remaining salt, cooking until soft.
  5. Add lamb, breaking up the meat as it cooks with a wooden spoon until lightly brown. Then add spices, tomato paste and ¼ cup of water, cooking and stirring for two minutes
  6. Divide dough into four, and roll each portion out on a floured surface, shaping dough into rectangles roughly 12x30cm.
  7. Top each of the pizza bases with a quarter of the cooked mince mixture and sprinkle with a quarter of the drained chickpeas
  8. Slide pizzas into the oven, rotating the pizzas once, and bake until bases are crisp and brown
  9. Remove pizzas and top with extra yoghurt and coriander leaves, serve

 

 

Lite Middle Eastern Lamb Pizzas

Serves: two

Time: 30 minutes

Ingredients:

  • 1 large Lebanese bread
  • Olive oil spray
  • 200g of lean lamb mince
  • 1 medium red onion (half chopped finely, the other half sliced)
  • 1 tablespoon of tomato paste
  • 1 tomato, sliced thinly
  • 1 teaspoon minced garlic
  • 2 teaspoons cumin powder
  • 1 teaspoon of chopped coriander
  • 1 teaspoon of chilli paste
  • 1 tablespoon of lemon juice
  • Flat leaf parsley to garnish
  • ½ cup of Greek feta, cubed
  • 1 tablespoon of pine nuts

Methods:

  1. Heat your pizza oven as prescribed
  2. Spray your frying pan with oil and place on medium heat
  3. Cook the finely chopped red onion until golden, and then add mince and garlic, breaking up the mince with a wooden spoon until brown. Add the cumin, chilli paste, and coriander and once heated through add the lemon juice and keep cooking until the meat juices evaporate
  4. Spread the tomato paste on the Lebanese bread and top with mince
  5. Dress with the remaining sliced onion, tomato and sprinkle with pine nuts and crumbled feta
  6. Bake until dough is crispy and brown, then garnish with parsley and serve

When the weather is bad or you simply don’t have the desire to cook, pizza is an easy choice. All you have to do is pick up the phone or go online to place your order, and in under 30 minutes you have a tasty pie delivered right to your door. No wonder that pizza night is a favourite for everyone in the family, especially for the adults!

Pizza aficionados can wax on about what makes a perfect pizza and tend to have a couple of shops that they prefer. The end result is that they frequently order delivery from those shops and get to know the various delivery guys.

Delivery guys are a special breed. They’re dedicated to delivering your pizza on time and the truly great ones get to know you, your family and your preferences. In fact, great delivery guys are like the postman- they’re dedicated to the delivery of your pizza within the specified time frame regardless of any impediments they encounter along the way, such as the elements or a delay in getting your pizza in the oven.

Most of us like to feel that our pizza shop and their delivery guys care about providing personable, efficient service. And we’ll back up that preference with our loyalty and our dollars. If you know that your favourite shop offers excellent pizza quickly and with a personal touch, then you’ll tend to order from them time after time.

For shops that stress delivery, this loyalty has a cyclical effect: customers rely on the shop to deliver their pizza in a fast, friendly manner, and the shop doesn’t want to disappoint customers or compromise that service, so they focus even more effort on delivery. Customers then see how seriously the shop regards delivery and rewards the shop with their continued patronage.

 

Every restaurant understands that treating customers well, especially repeat customers, is necessary for success. It’s the small things that make customers feel like their patronage counts, be it having the restaurant recognise us and know our standard order or be it giving us the table we want without a fuss our first time there. With delivery, it’s also knowing our names (and the names of our family members, even our pets) and our address so that they know the fastest route to our home.

When our delivery guy not only knows our names and our address, but remembers the latest details like how things are at work or which family milestone we just celebrated, it enhances the customer experience. In the end, reliable, engaging delivery breeds repeat business. And that experience benefits everyone.

You will have seen them on menus everywhere from your local pizza shop to the Italian restaurant that you like to visit in the city: the dessert pizza. Now many of us haven’t tried venturing into dessert pizza territory just yet. Those less adventurous have already confused taste buds from the idea of a sweet pizza.

“But pizza is supposed to have tomato sauce and meat!”, I hear you cry. Well, for traditional pizzas that’s true. But surely you’ve tried a BBQ base pizza, a pesto base pizza, perhaps even a curry or cream base pizza. These are all interesting variations on the traditional savoury pizza.

So, what’s so different about venturing into sweet pizza, dessert pizza, territory? There are many desserts that have a bready base to them with other ingredients. French toast is a traditional breakfast sweet staple. We’ve got pancakes with toppings. And how about good old bread and butter pudding? The comforting carby goodness of sweet treats like these fill our bellies and make us feel good.

How about crepes? The crepe is extremely popular in both savoury and sweet versions, and we take no issue with trying both the savoury and sweet types, whenever we feel like one of the other. While pizza base is a little thicker, it’s not really all that different, is it?

This is why dessert pizza is also a thing. What once seemed like a gimmick has now been a mainstay at many Aussie restaurants and cafes around the country. It’s probably time to take the dive into the dessert pizza pool if you haven’t taken a dip yet.

Dessert pizzas aren’t just something fun for the kids to try, they’re a great sweet treat to end your meal for adults, too. If you’re more a fan of the dessert than dinner then it’s the perfect way to do things. Have a nice salad for dinner and then indulge yourself with a dessert pizza to finish the meal.

We love Nutella, which is one of the most popular ingredients as a dessert pizza base. Combine it with some bananas and strawberries, and maybe top with cream when fresh out of the oven and you’ve got a sweet, carb-laden treat, just begging to be gobbled up.

There really is no end to what you can put on dessert pizzas, like a savoury pizza really. Think of what you like to put on pancakes, to begin with, and you’re off to a flying start. For the ultimate in your pizza repertoire, go for a pizza dinner and a pizza dessert – just don’t blame us if your sides split due to eating too much goodness!

While traditionalists look at the dessert pizza as an abomination of traditional Italian pizza cuisine, we believe that dishes are all about experimentation. After all, Australian pizzas as they are don’t have all that much in common with traditional Italian style pizzas unless you go to a traditional Italian restaurant. We’ve adapted them to fit our tastes, and to make them more appealing to the Aussie palate.

Traditional Indian curries were adapted in England to make their very own versions. Curries these days have come to a very different point than what traditional Indian curries used to be unless you go to a traditional Indian restaurant.

We like taking chances, making changes, switching recipes, and trying different bits and pieces until we hit on a brand new flavour sensation, which is what we believe dessert pizzas are.

While they’ll still not popular with the mainstream, perhaps in the years to come they will be, as more and more people try out the dessert pizza and fall in love with them. Like the crepes, you may even find that you prefer a sweet version of the pizza to its savoury pizza version, but then again you’ll never really know if you don’t try it, will you?

If you haven’t yet tried out dessert pizza, then seize the day – carpe diem. It may be one small step for mankind, but one giant leap for your taste buds. You’ve got nothing to lose, do you? Those with a sweet tooth may even find themselves an addict and an advocate of the dessert pizza to their friends and family. Dessert pizza is here to stay, so take a bite.
